From One Dinner to Many: Astrid’s Story

Welcome to Part V.

As Mother’s Day weekend rolls around, we find ourselves strolling down memory lane, thinking back on the many special dinners we’ve had the privilege to host. Mother’s Day 2023 in particular stands out—when a mother-and-son duo, Astrid and Aidan, joined us for dinner. Their bond was infectious, their energy unforgettable. At the time, we had no idea how that one evening would spark something deeper.

In the time since, Astrid has grown into an integral part of the Campo story. She’s no longer just a guest at our table; she helps set it.

Now, in 2025, we’re raising a toast to Astrid—our Campo mom. Her heart, grit, and belief in what we’re building have helped carry us through the most trying times. She’s part of the reason we’re still here, creating and dreaming.

Astrid, thank you for believing in our chaos. We couldn’t do this without you. If you see her at the pass tonight, give her a smile and a heartfelt Happy Mother’s Day. She’s earned it along with a drink or two!

Menu Highlights :

Cornish Game Hen: A refined nod to Ulysses’s mom’s carne asada nights, when game hen was a rare treat. Ours is brined in citrus and grilled to a smoky finish, served with a rich hen jus infused with turmeric. Creamy, skin-on Yukon gold potatoes with bitter red frill, and heirloom carrots from the market round out the plate with balance and depth.

Surf & Turf: A 15-day dry-aged, 25oz ribeye grilled over our Santa Maria for smokey depth. Paired with shrimp sautéed in bone marrow butter for a rich, savory complement.

Astrid’s Drink Recommendation :

Mezcalito Sour: A warm-weather favorite with a bright, tropical profile. Smoky mezcal blends with passion fruit agave and fresh lime for a refreshing twist on a classic sour.

Prickly Pear Margarita: Vibrant, slightly sweet, and sun-kissed—we blend tequila with prickly pear, fresh lime, and a touch of agave for a bright, refreshing sip.
